Well, I was gonna say Rosenberg Trio ... but that's two guitars and a bass (my favorite kind of trio).

E.S.T
RIP Esbjörn......
I love this video to E.S.T's "What Though The Way May Be Long":
Here's E.S.T playing a Live version of "Behind The Yashmak" with a guest, someone called Pat Metheny on guitar.
I really think E.S.T broke new ground musically, blending a cocktail of everything they had heard.

Not sure about my favourite five, but these two seem to be under-represented:
John Taylor/Palle Danielsson/Martin France
Enrico Pieranunzi/Marc Johnson/Joey Baron

Here's one for you
Neil Cowley Trio.
OK, you've never heard of them, but they're getting quite a rep here in the UK. Bring a pair of ears, an open mind and a sense of humour......

Cannot believe you guys forgot Michel Petrucciani with Steve Gadd and Anthony Jackson live from Tokyo. But of course should the big guns shoot before the pebbles starts flying. Just made that one up btw ;-)
Too bad he died in 99, Michel Petrucciani. Fun style of playing, very lyrical, rythmical, and with an exceptional beauty in articulation. Me thinks anyway.
